Milling and Flaking

Generally, drier grains are milled, and grains with a higher moisture content are flaked.

Milling is when you take a grain and grind it very finely into a flour or meal. Usually the grain is wheat, but it can also be spelt, buckwheat, rye or any of a variety of other grains. Corn can also be milled into cornmeal.

Flaking is when you take a grain such as oats and crush them flat, usually making oatmeal.
