Barley is an ancient grain that was the staple for many people for centuries, but has become less available in our modern times. This is unfortunate because it is more nutritious than either wheat or oats. It is also one of the few grains that can be milled into flour or rolled into flakes. Our barley is also sproutable. It can be soaked overnight to be eaten as a soft partially sprouted grain. This is a truly versatile and valuable grain to have.
